Easter Joy

Our Easter was so wonderful, and very special to us. Maybe because we started a new tradition, or were so moved by the message at Vintage Faith on Sunday. I can’t stop singing “You are my joy, my joy” by Josh Fox. It’s so true.
  

I was feeling something extra delicious for Easter. . . Carrot cake is one of my favorite desserts of ALL time, yet I’ve never made one. So, since we were spending Easter just the two of us, I decided to go all out and make it from scratch. I used Joy the Baker’s Kitchen Sink Carrot Cake recipe {including her cream cheese frosting}, and  somehow followed it perfectly because it was seriously the best carrot cake I’ve ever had — and I made it! I think I just started a new Johannes tradition! We couldn’t stop laughing at the goodness that was going on in our mouths.

Thought these were very Easter-themed and Springy. We missed our families a lot this Easter, but I’m glad we had each other, along with good food, cake, prayer and snuggles to console us. A great Easter in my book.

Seriously the best pancakes ever

Sunday I made Joy the Baker‘s Blueberry Orange Almond Pancakes. After mixing in the orange juice, zest, almond and blueberry – we were in for a real treat. Seriously, the best pancakes you’ll ever eat. We scarfed them down, with some bacon on the side {of course}.

To eat in Moss Landing: Phil’s Fish Market

After a couple hours of kayaking on Sunday, we stayed in Moss Landing and ate at Phil’s Fish Market. It’s this little market on the harbor, just steps away from a gorgeous stretch of beach. We ordered shrimp, calamari and their famous {and raved about on the Food Network} Cioppino. It was the perfect dish for Fall – full of hot clams, scallops, mussels, crab, halibut and calamari.

On our way out we took a slice of their carrot cake to go. What a great day!

The Santa Cruz

“The Santa Cruz” is seriously the best sandwich you’ll ever eat. I normally order it from the local grocery store deli, but have adapted it so it has less calories.

Here’s what you’ll need:

  • Whole wheat thin buns
  • Oven-roasted turkey breast
  • ‘Best Foods’ mayonnaise
  • Honey mustard
  • Spinach
  • Cucumbers
  • Tomatoes

Put it all together and voila – deliciousness!

    Total calories {according to my Fitness Pal} = 404

This stays fresh for a while and is great for lunch at work or in the park.

Pie & patio party

In case you saw my summer bucket list – you would have seen I wanted to throw a pie party. I did this past weekend and it was crazy awesome. Since the 4th of July fell on a Wednesday this year, I decided to keep the red, white and blue theme going. First, us ladies got our bake on:

While the pies baked {or froze}, we enjoyed the party on the patio with the boys {from the left: Olive, Katy, Heather & me}. Our aprons were so comfy we about stayed in them the entire time:

We were all so hungry that we forgot to take pictures of the chicken BBQ sandwiches and slaw and beautiful sides. {sad face}
When the pies were done, we all did some pie-tasting!

It was great to sit by the fire and watch the day come to a close with new friends {and one old}. I loved having people over.. I’ve been DYING to throw a party, hahaha.
